Encapsulation and delivery systems of cinnamon essential oil for food preservation applications.

Cinnamon essential oil (CEO) can be used as a natural food preservative, but its low solubility and degradability are limitations. Encapsulation and delivery systems like spray drying and liposomes have been developed to improve CEO's efficiency, enhancing food preservation and extending shelf life.
