Potato consumption, polygenic scores, and incident type 2 diabetes: An observational study.

Consuming total potatoes, mashed potatoes, and fried potatoes is associated with an increased risk of type 2 diabetes, independent of genetic predisposition. Replacing potatoes with non-starchy vegetables lowers risk.
