Potential antioxidant, anticholinergic, antidiabetic and antiglaucoma activities and molecular docking of spiraeoside as a secondary metabolite of onion (Allium cepa).

Spiraeoside, a flavonoid found in onions, exhibited antioxidant capabilities similar to BHT but less potent than α-tocopherol, trolox, and BHA. It also showed inhibitory effects on enzymes related to Alzheimer's disease, diabetes, and glaucoma, suggesting potential medicinal applications.

Effects of processing technologies on the antioxidant properties of common bean (Phaseolus vulgaris L.) and lentil (Lens culinaris) proteins and their hydrolysates.

Researchers found that ultrasound, heat treatment, and microfluidization, combined with enzymatic hydrolysis, enhance antioxidant properties and protein solubility in bean and lentil protein hydrolysates, indicating potential for improving these proteins' antioxidant properties.
